Drinking absinthe is quite a ritual - start with balancing the absinthe spoon on top of a French absinthe glass. Place a sugar cube on the absinthe spoon and pour a measure of absinthe over the sugar. Then slowly drip iced cold water over the sugar cube; all true absinthes are bitter with the addition of sugar abating the bitterness and also enhancing the herbal flavour-profile of the drink.
